Chefs prepare mise en place to create three course menus.
Service staff design menus for tables, create an aperitif and decide how they will decorate the tables.
One group of students visit a local wine shop where owner makes individual suggestions for wines for the menus.
Lunch for students and teachers at the college.
Teaching staff hold project meeting. Students visit Hagen city centre's Christmas market.

Chefs prepare three course meals. Service staff decorate the tables for guests and prepare aperitifs. Snacks available to students during the morning.
Guests arrive for ELOCASS lunch and are allocated to "European" tables. Official welcome speech by head teacher. Service staff serve aperitifs and the menus.
Chefs, service staff and teachers clean the kitchen and restaurant.
Students and teachers are invited by Lars Martin, the manager of the German Hotel and Restaurant Association, to dinner at "Zum Würzburger", a local restaurant, for a farewell dinner.
